PRODUCTION OF KIMCHI CONTAINING SPECIAL IMMUNOPROTEIN AGAINST E. COLI AND HELICOBACTER PYLORI AND KIMCHI CONTAINING SPECIAL IMMUNOPROTEIN PREPARED THEREBY

PURPOSE: A method of preparing kimchi containing special immunoprotein against an antigen causing gastroenteritis is provided. Kimchi containing the special immunoprotein has a preventing effect on gastrointestinal disease such as gastroenteritis, duodenitis or the like. CONSTITUTION: A kimchi material which is cut to a predetermined size is preserved with 10 to 12% by weight of saline water and desalted to a salinity of 2 to 3% by weight. Then, the desalted kimchi material is added with 20 to 30% by weight of a seasoning material and 0.5 to 3.0% by weight of an egg yolk containing special immunoprotein. The egg yolk containing special immunoprotein is prepared by inoculating an antigen selected from Escherichia coli or Helicobacter pylori into a chicken.
