摘要 Herein is depicted a process for obtaining stable flour of avocado pulp by dehydration and added with natural and chemical preservatives. The obtained flour has a prolonged shelf life at ambient temperature and allows keeping the typical organoleptic properties of avocado. Likewise, the flour can be consumed alone or combined with other ingredients such as vegetables, liquids or any other variety.
