PROBLEM TO BE SOLVED: To provide an industrializable method with which a highly unsaturated fatty acid such as arachidonic acid, eicosapentaenoic acid (EPA), docosatetraenoic acid (DTA), docosapentaenoic acid (DPA) or docosahexaenoic acid (DHA) can be produced in high yield by liquid culture of a microorganism belonging to the family Labyrinthulid and having high productivity of the unsaturated fatty acid. SOLUTION: The highly unsaturated fatty acid is produced by culturing the microorganism belonging to the family Labyrinthulid and having the productivity of the highly unsaturated fatty acid. In the process, culturing is carried out in a liquid culture medium containing at least one kind of fibrous material selected from inorganic and organic fibers and lecithin. COPYRIGHT: (C)2004,JPO
