METHOD FOR PREPARING CRUDE SAPONIN FOR FOOD MATERIALS FROM GINSENG LEAVES

PURPOSE: Provided is a method for preparing crude saponin from inexpensive ginseng leaves, by which crude saponin for use as raw materials for functional foods and processed foods is produced. CONSTITUTION: The method for preparing crude saponin from ginseng leaves comprises the steps of: adding water or an aqueous alcohol solution to ginseng leaves to obtain crude extract of ginseng leaves; and purifying the crude extract of ginseng leaves with a synthetic resin to obtain crude saponin. Particularly, the aqueous alcohol solution is 5-100% ethyl alcohol, and the synthetic resin is selected from the group consisting of Amberlite XAD resin, Dowex resin, Supelite DAX resin, Diaion HP-20 resin and other ion exchange resins.
