<P>PROBLEM TO BE SOLVED: To provide a method for producing wash-free rice and an apparatus for producing the wash-free rice which forms uniform and stable coating on the surface of the rice grains by using a solution of starch and enabling the wash-free rice to keep and improve eating taste after cooking. <P>SOLUTION: The wash-free rice is produced by removing all or almost all of the aleurone layers and adding starch solution to the rice grains and then drying to form coating covering the surface of the rice grains. The coating film covering the surface of the rice grains is formed by adding and attaching starch solution with maximum content of water which is a solvent to the solute starch, to the rice grains which has aleurone layers removed or almost removed, at a temperature condition in which the temperature is higher than that of the rice grain, and then drying. <P>COPYRIGHT: (C)2004,JPO |
