摘要 PURPOSE: A production method of bread by filling dough composed of wheat flour and glutinous rice flour with a jam composed of sweet potato and honey and then baking in an oven is provided. The produced bread has a light yellow color and improved commercial value. CONSTITUTION: A mixture of 70% by weight of a steamed and crushed sweet potato, 15% by weight of red bean jam and 8% by weight of sugar is heated for 80min while agitating and then agitated with 6% by weight of acacia honey and 1% by weight of eggs to give a jam. A mixture of 50.85% by weight of hard wheat flour and 16.95% by weight of all-purpose wheat flour and glutinous rice flour is added with 8.46% by weight of eggs, 3.39% by weight of milk powder and 1.79% by weight of each of salt and baking powder and then kneaded with a small amount of mugwort powder and cocoa powder to give dough. The dough is filled with the jam and formed into the shape of a sweet potato. Thereafter, it is baked for 15min under the condition in which an upper flame is maintained at 210deg.C and a lower flame at 190deg.C.
