A process for producing a dipeptide from an L-amino acid amide and an L-amino acid is by using an enzyme with L-amino acid amide hydrolase activity or a material containing such enzyme. Independent claims are also included for: (1) an L-amino acid amide hydrolase obtained from a microorganism belonging to Erwinia, Rhodococcus, Chryseobacterium, Micrococcus, Cryptococcus, Trichosporon, Rhodosporidium, Sporobolomyces, Tremela, Torulaspora, Sterigmatomycesor Rhodotorulagenus which can catalyze the reaction to produce a dipeptide from an L-amino acid amide and an L-amino acid; (2) a method for producing an L-amino acid amide hydrolase by culturing any of the already-specified microorganisms before accumulation of such product in the medium and/or cells; and (3) a similar method for producing an L-amino acid amide hydrolase by using a transformant microorganism that can express: (a) a protein containing an amino acid sequence of (V) with 413 amino acids; (b) a protein based on the sequence of (V) but with some amino acids substituted, deleted, added or transposed and capable of catalyzing the reaction for producing a dipeptide from an L-amino acid amide and an L-amino acid; or (c) a protein encoded by a DNA hybridizable with a polynucleotide containing a base sequence with bases from 57-1295 in the sequence of (IV) of 1307 base pairs or its complementary base sequence under stringent conditions and encoding a protein capable of catalyzing the reaction for producing a dipeptide from an L-amino acid amide and an L-amino acid. |
