The invention relates to a novel protein fraction with phospholipase D activity. Said fraction originates from members of the Papaveraceae family, in particular Papaver somniferum and is composed of two protein sub-fractions A and B, whose molecular mass lies in particular around 116.4 kDa or 114.1 kDa and which have an isoelectric point pl of 8.7 or 6.7 and an optimum hydrolytic activity at pH 8.0 or 5.5. The two sub-fractions are primarily activated by Zn<2+> ions and constitute two isoenzymes. Said protein fractions are primarily used for the hydrolysis and/or transphosphatidylation of phospholipids and their lysoforms.
