PROBLEM TO BE SOLVED: To provide mineral water of a reduced system which can optionally be adjusted in hardness and has an antioxidation function. SOLUTION: The mineral water, which is optionally adjusted in the hardness is the reduced system below ORP=0.84 to 0.047 in pH based on 25°C to counterbalance the ORP under the ordinary atmosphere environment and which has the antioxidant function, is manufactured by diluting dolomite of a natrual mineral that is the carbonate of calcium and magnesium, limestone that is the carbonate of calcium, shells, such as corals and oysters, magnesite that is the carbonate of magnesium, or the fired matter of these carbonates alone or a combination thereof with carbon dioxide water or acidic water that is formed by removing active chlorine and active oxygen by active carbon or the like from electrolytic anodic water at the time the water is electrolyzed, or electrolytic cahohodic water of the reduced system that is dissolved in an aqueous organic solution of lactic acid or the like and that has the antioxidation function thereof or the water resembling that of organisms.
