PURPOSE: Provided is a method for manufacturing kimchi using a cactus, particularly Opuntia ficus-indica var. saboten Makino. The manufactured cactus kimchi has a new taste and flavor and attracts new consumers who are not familiar to conventional kimchi. CONSTITUTION: A method for manufacturing kimchi using Opuntia ficus-indica var. saboten Makino comprises the steps of: finely cutting Opuntia ficus-indica var. saboten Makino; preserving the cut pieces thereof in a salting solution of which salinity is adjusted to 1-3% by adding pickled fish liquid or salt, and fermenting them. The salting solution further contains garlic, ginger, sugar and red hot pepper powder.
