<P>PROBLEM TO BE SOLVED: To provide a new technique for purifying fucoxanthine in high purity and stabilized state even by using sea alga as the raw material. <P>SOLUTION: Fucoxanthine is produced by extracting the components of the sea alga with ethanol under a light-shielded condition and adsorbing foreign materials with activated carbon. The raw alga of collected state is used as the raw material. The alga is optionally cut to a proper size before the extraction of the components. Concretely, the specified sea algae are those selected from raw Laminaria japonica, raw Undaria pinnatifida, raw Eisenia bicyclis, raw Sargassum fulvellum and raw Hizikia fusifome because these algae contain relatively large amount of fucoxanthine and are available as abundant resources.
