<P>PROBLEM TO BE SOLVED: To obtain a grain swollen food product-modifying composition for obtaining a high quality grain swollen food product having an increased volume, an excellent appearance, an excellent inner layer, and an excellent flavor on the production of the grain swollen food product such as bread or cake, and to provide a method for producing the same. <P>SOLUTION: This grain swollen food product-modifying composition is characterized by containing a yolk plasma-floated fraction.
