PURPOSE: A method for manufacturing a poultry broiled food(poultry kui) using loess is provided. The food product coated with a coating material of a triple layer structure can be cooked within about 3min by frying in vegetable oil when necessary and stored in a frozen state for 6 months while having soft meat quality and a good taste. CONSTITUTION: Live poultry is soaked in saline water for 7 to 9hr, together with various seasoning materials, successively coated with Korean paper and thin cotton cloth such as bandage and gauze and then roasted for 1hr at 230 to 270deg.C in an oven while rotating by supplying steam after coating with loess. In the process, it is fried in vegetable oil at 170deg.C after successively peeling the loess, thin cotton cloth and Korean paper from the broiled poultry. |
