PROBLEM TO BE SOLVED: To provide deep frying equipment for foodstuff by which the shape of the foodstuff is not collapsed and a food stuff is finished to a crisp by frying food material in an oil tank at a desired fixed temperature. SOLUTION: The deep frying equipment 1 for foodstuff comprises the oil tank 11 containing edible oil for frying the food material; a discharging pipe 12 for discharging the oil in the tank 11; a heat exchanger 3 for heating the oil in the discharging pipe 12; and a supply pipe 13 for supplying the oil heated by the heat exchange 3 into the tank 11. A pressure reduction device capable of reducing pressure within the tank 11 is provided. Within the tank 11, a basket 16 for holding the food material is disposed. COPYRIGHT: (C)2004,JPO
