PROBLEM TO BE SOLVED: To provide a technique for determining the concentration of pyruvic acid, which has extremely excellent practicality and by which the concentration of the pyruvic acid can simply be determined by anyone to measure the concentration of the pyruvic acid, without quite needing a high degree experimental (operation) technique or a specialized knowledge. SOLUTION: This determination kit for simply determining the concentration of the pyruvic acid by-produced on the production of a yeast-fermented product such as Sake (rice wine) is characterized by comprising a reduced nicotinamide adenine dinucleotide (NADH), a lactate dehydrogenase (LDH), a tetrazolium salt, a catalyst, and a comparative agent exhibiting a color-developing state, when the pyruvic acid is contained in a prescribed concentration, wherein the reduced nicotinamide adenine dinucleotide (NADH), the lactate dehydrogenase (LDH), the tetrazolium salt, and the catalyst can be used respectively in amounts, needed for measuring the concentration of the pyruvic acid in the yeast-fermented product.
