<P>PROBLEM TO BE SOLVED: To provide a starch-based food product or a flour-based food product keeping the texture just after the cooking even after passing time, and keeping the texture just after the cooking even after heating with a microwave oven. <P>SOLUTION: Powder of an autolysis product is obtained by lightly pulverizing frozen raw Antarctic krill, autolyzing the pulverized product at 50°C for 60 min without adding water, deactivating the autolyzed product at 80°C for 10 min, and freeze-drying the deactivated product. The obtained dry powder of about 0.1-5% is added to the starch-based food product or the flour-based food product, and the resultant mixture is processed into various kinds of food products by routine procedures. <P>COPYRIGHT: (C)2004,JPO |
