摘要 <P>PROBLEM TO BE SOLVED: To provide a highly copper-containing yeast which contains the copper in a high concentration, is suitable as a food raw material and the like, and does not deteriorate the flavor and the like of foods, when added to the foods, to provide their homogenization product, to provide a method for producing the highly copper-containing yeast, by which the highly copper-containing yeast can be produced in a state that a copper utilization rate is compatible with a yield per sugar (growth rate), and to provide a food containing the highly copper-containing yeast. <P>SOLUTION: This highly copper-containing yeast which has a copper content of &ge;500 wt. ppm based on the dry weight of the cells is produced by washing the copper-containing yeast with 25&deg;C ion-exchanged water, until the copper concentration of the washing liquid becomes &le;1 wt. ppm. The highly copper-containing yeast is characterized in that the copper content of a precipitated fraction obtained by homogenizing the copper-containing yeast, until the un-homogenized cells can not be confirmed under an observation with a microscope, obtaining the precipitated fraction, washing the fraction with the 25&deg;C ion-exchanged water, until the copper concentration of the washing liquid becomes &le;1 wt. ppm, is &ge;70 wt. ppm based on the dry weight of the cells. The method for producing the highly copper-containing yeast is characterized by subjecting the yeast to fluid culture so that the amount of the added copper is 50 to 450 wt. ppm based on the total amount of the culture liquid. <P>COPYRIGHT: (C)2004,JPO
