Increasing the stress protein content of plant material comprises heat treatment in an atmosphere with an elevated carbon dioxide content. Independent claims are also included for: (1) a stress protein produced as above; (2) plant material with a stress protein content above 0.005% by weight of total protein or above 50 mg per kg of plant material or with a heat shock protein (HSP)70 content above 0.5 mg/kg; (3) pharmaceutical preparation, foodstuff, immunostimulant, cosmetic preparation, antibiotic substitute or crop protection agent containing the plant material.
