A process for producing lipase comprises culturing the micro-organism Trichosporon heteromorphum in an aqueous nutrient medium under aerobic conditions and recovering the lipase accumulated in the resultant fermentation liquor. Preferred conditions are 25-35‹ C. and pH 6À0-7À5. The lipase may be precipitated with acetone.
