FIELD: food-processing industry. SUBSTANCE: method involves holding raw plant material in water; providing partial or complete freezing of raw plant material with following defrosting and juicing; introducing into water preparation produced by sequential extracting of Pythium irregulare micromycet biomass with the use of non-polar extractant in above critical state, water, alkaline, water, acid, water, alkaline, and water, with following joining of first extract with solid residue, said preparation being used in an amount of 0,5-1.104 mg/t and holding time being 2-5 hours. EFFECT: improved quality of juice, increased efficiency by reduced time of holding raw plant material in water before freezing operation. 2 ex |
