PROBLEM TO BE SOLVED: To provide a method for preparing a soybean protein which can provide a dullness-free soybean protein (such as a soybean milk, a powdered soybean milk, a concentrated soybean protein and an isolated soybean protein) even when soybean hulls, iron powder, etc. are included in defatted soybeans or even when the presence of metals or the like in industrial water for use in extraction is detected. SOLUTION: This method for preparing the soybean protein is characterized in that, when or before the defatted soybean is brought into contact with water, ascorbic acid or erythorbic acid or a salt thereof is allowed to exist.
