PURPOSE: Provided is a method for manufacturing a bamboo salt-salted hairtail. A hairtail is salted with bamboo salt and matured at low temperature. Therefore, its fish smell and a bitter and puckery taste are minimized. CONSTITUTION: A method for manufacturing a bamboo salt-salted hairtail is characterized by the steps of: mixing bamboo salt in sea water to appropriate salinity; soaking a hairtail therein and maturing at low temperature; and quick freezing the hairtail and vacuum-packing it.
