PURPOSE: A method of producing naturally matured whole cabbage by storing washed cabbage in an oak container and then spraying Gardeniae Fructus powder and salt thereon is provided, thereby increasing the shelf life of the whole cabbage. CONSTITUTION: Washed whole cabbage(20) whose damage skin and roots are removed is placed in an oak container(10) buried in the earth, sprayed with a salting material(21) containing Gardeniae Fructus powder and salt in a ratio of 50:50 and then matured for 10 to 14 days at 12 to 15deg.C in a sealed state.
