PURPOSE: A method of preparing functional grain by inoculating grain such as unpolished rice, polished rice, barley or the like with Tricholoma matsutake mycelium and then culturing is provided. Therefore, the product has an enhanced taste and flavor as well as nutrient components. CONSTITUTION: Sterilized grain such as unpolished rice, polished rice, barley or the like is inoculated with Tricholoma matsutake mycelium and then cultured for not greater than 10 days to give functional gain. The Tricholoma matsutake mycelium can be mixed with mycelium of Pleurotus ostreatus, Lentinus edodes, Cordyceps militaris, Phellinus linteus, Poria cocos or the like. The functional grain contains greater than 0.0001% by weight of Tricholoma matsutake mycelium.
