<P>PROBLEM TO BE SOLVED: To provide a method for producing noodles, easily produced and not loosing the strengths in the body of the noodles even on preserving for a long time after its heat treatment. <P>SOLUTION: This method for producing the noodles comprises using cereal flour as a main raw material, forming a noodle belt containing a thickening polysaccharide gelled by reacting with a poly valent metal ion, applying a solution or powder containing the poly valent metal ion on at least one of the surfaces of the noodle belt, joining the noodle belts to make the applied surface becoming as inside, rolling and cutting to obtain noodle lines. As the thickening polysaccharide, 1 kind or ≥2 kinds selected from alginic acid, an alginic acid salt, an algae extract consisting mainly of alginic acid, pectin, carrageenin and gellan gum are preferably used. As the solution or powder containing the poly valent metal ion, a substance containing 1 kind or ≥2 kinds selected from a calcium salt, magnesium salt, calcined bone powder, and calcined egg shell is preferablyused.
