FIELD: food-processing industry. SUBSTANCE: method involves using smooth pea grains in biological maturity stage; subjecting pea grains to swelling in the presence of preparation produced from Mortierella zychae micromycet biomass by predetermined process; filling cans with pea grains together with liquid media; sealing and sterilizing. EFFECT: increased yield of final product due to increased weight of pea grains after swelling procedure, prolonged shelf life without deterioration of consumer properties and provision for year-round reprocessing of pea into canned product. |
