PROBLEM TO BE SOLVED: To obtain a scarcely soluble mineral composition causing suppressed precipitation and separation in a liquid food or in an intermediate composition which is liquid in a food processing stage and having excellent dispersion stability by compounding a scarcely soluble mineral with a specific emulsifying agent. SOLUTION: The objective composition is produced by compounding a scarcely soluble mineral (e.g. scarcely soluble calcium compound) with an emulsifying agent containing an emulsifying agent having an HLB of <=6 as an essential component. The scarcely soluble mineral is preferably fine powder having particle diameter of <=10 μm. The compounding ratio of the scarcely soluble mineral in the composition is preferably <=35 wt.%. The emulsifying agent having an HLB of <=6 is preferably a glycerol fatty acid monoester or a glycerol fatty acid mono-diester. When the emulsifying agent having an HLB of <=6 is not sufficiently soluble or dispersible in an aqueous composition, the emulsifying agent having an HLB of <=6 is preferably used in combination with a hydrophilic emulsifying agent having higher HLB value. The compounding amount of the emulsifying agent in the objective composition is preferably 0.5-2.5 wt.%. |
