<p>The invention relates to a continuous method for the production of olive oil and/or the juice of any pit fruit. The inventive method is based on the production of a shredded mesocarp pulp having an optimal, suitable texture for releasing the oil contained therein using a vacuum (negative pressure) extraction system. The pulp is disposed against the cylindrical, static and permeable extraction surface and lightly and gradually squeezed. The invention is characterised in that: a mesocarp pulp is obtained by shredding the vegetable fibres and creating vacuoles, for which purpose the olives are subjected to a gentle abrasive action; the oil is obtained in a vacuum system (negative pressure); all of the process is performed at low temperatures; and the inventive method does not involve the heating of the pulp nor the addition of water and/or other products at any stage of the process.</p> |
