PURPOSE: Provided is a method of processing an oak mushroom, which increases vitamin D to make the foods with enriched nutrients and in vivo calcium absorption. CONSTITUTION: A method of processing an oak mushroom comprises the step of: illuminating an ultraviolet B ray to the inside of the pileus of the oak mushroom by 0, 2.5, 5.0, 7.5, 10.0 J/cm¬2 to increase the content of vitamin D2. In drying the oak mushroom by hot blast, the ultraviolet B ray of 10J/cm¬2 is illuminated thereto per three hours and six hours to increase the content of vitamin D2 by seven to eight times.
