PROBLEM TO BE SOLVED: To provide an easy and simple method for producing mild water-soluble collagen which can quickly be absorbed in human bodies, can also easily be dissolved in cold water, and can be used for various functional drinks and foods, from pig skins as a raw material. SOLUTION: This method for producing the mild water-soluble collagen comprises finely chopping the pig skins to produce the collagen raw material, mixing the raw material with a prescribed amount of water without passing through a preliminary treatment comprising a conventional acid treating and washing process, subjecting the mixture to the first and second enzymatic treatment processes under prescribed pH, temperature and enzyme concentration conditions to obtain the low molecule water-soluble collagen, and then subjecting the product to conventional sterilizing and drying processes.
