<P>PROBLEM TO BE SOLVED: To provide a fish-seasoning material containing peptides, minerals and other functional components derived from Maurolicus muelleri, having a high nutritious value and without having unpleasant fishy smell. <P>SOLUTION: This method for producing the functional fish-seasoning material is characterized by mixing a deep sea fish, Maurolicus muelleri belonging to Sternoptychidae which is one of Micronekton living in Japanese sea offshore in a high density, with pregelatinized rice, steam cooking, producing koji (malted rice) by adding soybean source koji, adding salt water (or soybean source or seasoning liquid) and yeast as necessary to the obtained koji, and fermenting for maturing the obtained unrefined soy source. <P>COPYRIGHT: (C)2004,JPO |
