CONSTITUTION: A marbling meat manufacturing method comprises the steps of: dissolving proteins in water, followed by heating, and emulsification to give a first emulsion; cooling the emulsion, followed by mixing with a protein coagulant to give a second emulsion; and injecting the second emulsion into meat containing low fat.
