<P>PROBLEM TO BE SOLVED: To provide a plastic oil and fat composition for roux used when producing the roux such as white roux, curry roux, stew roux or hashed beef roux, having good taste and good dispersibility of wheat, free from lump of wheat and capable of producing foods such as white source, curry or stew having smooth texture. <P>SOLUTION: The plastic oil and fat composition for roux comprises an emulsifying agent having ≥10 HLB.
