<P>PROBLEM TO BE SOLVED: To provide a method for producing buckwheat noodles, giving such buckwheat noodles that are more delicious than ever first of all, and have a high nutritive value as the next, by germinating buckwheat seeds and using the germinated seeds as a raw material. <P>SOLUTION: This method for producing the buckwheat noodles comprises utilizing all of the materials comprising water used in germinating the seeds, an aqueous solution eluted from the seeds which are now germinating, and buckwheat seeds which are in a state of being saturated with the water, without throwing away any of the materials. Thus, the seeds in the germinating state are pulverized as they are, and mashed to prepare pasty dough, and further mixed with the other dough which is prepared by kneading flour of buckwheat seeds of the same kind to the germinating seeds with the solution eluted from the seeds, so that the buckwheat noodles are produced. <P>COPYRIGHT: (C)2004,JPO |
