PURPOSE: A method for producing hot pepper powder by drying finely cut green hot pepper at low temperature under nitrogen gas atmosphere is provided. Therefore, the product maintains clear red color as it was while keeping nutritive values. CONSTITUTION: Green hot pepper is washed, sterilized in an ozone sterilization chamber and removed from stalks. The sterilized green hot pepper is cut to a specified size, dried for 20 to 55hr at 15 to 40deg.C in a nitrogen drying chamber in which 85 to 99% nitrogen gas is maintained and then ground. |
