FIELD: food-processing industry, malt and feed production. SUBSTANCE: method involves heating grains to be germinated at temperature and for time interval sufficient for reducing mold content in grains. Apparatus has transportation system, steam supply device and air cooling device, which is arranged behind steam supply device. Transportation system has endless conveyor belt provided with through openings for through passage of steam and air. Apparatus, according to other version, has charging hopper, transportation system including vertical pipe having grain spreading control cone and steam supply device. Method and apparatus allow mold content in cereal grains to be reduced without adverse effect upon grain germination process.
