PROBLEM TO BE SOLVED: To provide a method for efficiently producing a stable fat-soluble vitamins-containing granular substance without causing collapse even in hot water without using a large amount of gelatin or specific gelatin. SOLUTION: The method for producing the fat-soluble vitamin and/or carotenoid-containing granular substance comprises emulsifying a mixture composed of (a) a fat-soluble vitamin and/or carotenoid, (b) gelatin, (c) saccharides and/or starch, (d) oils and fats, (e) an antioxidant and (f) water, changing the emulsion to liquid drops and collecting the liquid drops into starch powder to form fine particles and carrying out heat treatment of these fine particles at 60-180°C. In the method, ammonia or an ammonium salt is added to the mixture or the emulsion to adjust pH to 6-10. COPYRIGHT: (C)2004,JPO
