PROBLEM TO BE SOLVED: To provide a method for producing vanillin or a vanillin analogue without needing the addition of a precursor, or the like. SOLUTION: Vanillin or its analogue is produced by subjecting a mold to a liquid culture in a state that culture conditions comprising a nutritive state, temperature, pH, an aeration volume, a stirring rate and a culture time are property controlled, without adding a vanillin precursor, or the like.
