A method for producing a readily soluble crysltalline form of alpha -L-aspartyl-L-phenylalanine methyl ester ( alpha -APM) which comprises adding a solution of alpha -APM in an aqueous solvent to a stirred suspension of alpha -APM while maintaining the latter at a temperature lower than the solution.
