<P>PROBLEM TO BE SOLVED: To provide a paste material added to a food for a person having difficulty in mastication and deglutition for preventing accidental deglutition, simply exhibiting thickening and coagulation, easily adjusting the thickening or coagulation, without bringing a pasty feeling or the change of taste, and capable of providing a food having less adhering property. <P>SOLUTION: This paste material is to thicken or coagulate the food for caring or deglutition training to the patient or elderly person having difficulty in mastication or deglutition. As the paste material exhibiting suitable thickness or coagulation in the food, not exhibiting pasty feeling in eat feeling, not changing the taste of the food, improving the cohesive property of the food to reduce adhering property and promoting sliding property, used simply, and quickly exhibiting the thickness or coagulation, a native type gellan gum having ≤6.0 wt.% cationic concentration is used. <P>COPYRIGHT: (C)2003,JPO |
