<p>A method for producing crystals of N-acyl acidic amino acid which comprises cooling a mixture of N-acyl acidic amino acid or a salt thereof, a tertiary amine and water at a pH of 1 to 3 from a temperature of 65˚C or higher. The method allows the production of N-acyl acidic amino acid which is reduced in odor.</p> |
