<P>PROBLEM TO BE SOLVED: To provide a low-caloric substitute composition for a fat which is low caloric, has cooking suitability as a heating medium, without being damaged in a flavor and a mouth-feel required for a food oil, and is liquid at an ordinary temperature, to provide a low-caloric fat and oil composition which contains the low-caloric substitute composition for the fat, and to provide a food which contains the compositions. <P>SOLUTION: This low-caloric substitute composition for the fat contains a compound of an erythritol ester of fatty acid having a degree of substitution of the fatty acid of ≥85%, wherein the degree of substitution is a ratio of hydroxyl groups to which fatty acid molecules are linked to total hydroxyl groups in the compound. The low-caloric fat and oil composition contains the low-caloric substitute composition for the fat. The food contains the low-caloric substitute composition for the fat or the low-caloric fat and oil composition. <P>COPYRIGHT: (C)2003,JPO |
