Nutritionally enriched maple syrup with an elevated content of vitamins, in particular, nutritionally enriched maple syrup containing 50 mg or more of vitamin C per 100 ml of maple syrup obtained by thermally concentrating maple sap. Maple syrup further enriched with vitamins such as vitamin E and vitamin B~1 and other nutrients also falls within the category. Thus, the nutritional value and qualities of maple syrup, in particular, thermally concentrated maple syrup, can be improved and the application range thereof to other foods can be widened. This nutritional enrichment can be carried out by an efficient method suitable for the production on an industrial scale. Moreover, the nutritionally enriched maple syrup exhibits a well-balanced flavor and, therefore, can be added to various foods over a wide range. |
