PROBLEM TO BE SOLVED: To provide a kitchen knife having a partially slidable grip, having a structure where a part of the grip of the kitchen knife is slidable in the direction of the back, whereby the slid part is pressed by the palm to simply cut a solid food material. SOLUTION: The blade part 2 is fitted to a fixed part 1 of the grip of the kitchen knife, a sliding part of the grip is provided on a part of the fixed part of the grip of the kitchen knife, and a guide 4 is provided on the fixed part of the grip of the kitchen knife. The guide is provided with a stopper A and a recessed part 6, a recess-like rail 7 is provided on both sides of the fixed part of the grip of the kitchen knife, and a projection-like rail is provided in the inside of the sliding part of the grip of the kitchen knife. A projecting part is provided on both sides of the inside of the sliding part of the grip of the kitchen knife, and a stopper is provided on one side of the inside of the sliding part of the grip of the kitchen knife. A guide groove is provided on the inside of the sliding part of the grip of the kitchen knife, and the projection- like rail is provided on the inside of the sliding part of the grip of the kitchen knife.
