PURPOSE: Provided are a production of a botanical tofu coagulant which has more hygienical stability than inorganic salt coagulant and a production of high quality of tofu using it. CONSTITUTION: The production method of tofu using a botanical tofu coagulant comprises the steps of: preparing a persimmon coagulant by extracting persimmons with water, ethanol and citric acid, freeze-drying the extracts and thawing them in distilled water; preparing a grape coagulant by adding ethanol and citric acid to grapes, crushing and freeze-drying them, and thawing them in distilled water; preparing a mixed coagulant by mixing the above coagulants; and manufacturing tofu using the mixed coagulant rather than saline solutions. |
