<p><P>PROBLEM TO BE SOLVED: To provide a method for preserving vegetables to solve a problem such that as a time for preserving vegetables and fruits becomes longer, loads caused not only by metabolism but also by the changes of temperature and humidity are put on the vegetables, the peculiar nutritious components of the vegetables are reduced together with the loss of freshness and a value as a food material is decreasing. <P>SOLUTION: This method for preserving the vegetables for suppressing a reduction in value of the vegetable as the food material is provided by spraying an aqueous solution containing the peculiar nutritious components of the vegetables and nutritious components necessary for maintaining human health as fine particles to penetrate them into the inside of the vegetables, increasing humidity in the preserving container for suppressing the loss of the freshness with time and improving the value of the vegetables as the food material. <P>COPYRIGHT: (C)2003,JPO</p> |
