FIELD: food-processing industry, in particular, food-concentrates industry. SUBSTANCE: method involves extracting bitter substances from citrus fruits flavedo; treating citrus fruits with preparation produced by sequential extracting of Mortierella indohii micromycet biomass with the use of non-polar extractant in above-critical state, water, alkaline, water, acid, water, alkaline, and water, with following joining of first extract with solid residue; holding for 2-5 hours; crushing citrus fruits for obtaining of pulpy juice and concentrating the latter.
