<P>PROBLEM TO BE SOLVED: To provide a gelatinizing device for noodles stabilizing the quality of the noodles in a gelatinizing process through contacting steam equally with the inside of noodle ribbons transported with a conveyor. <P>SOLUTION: This gelatinizing device for the noodles makes a steaming process for noodle ribbons N by letting the noodle ribbons N put on the conveyor 28 pass through a steam chamber 26. The conveyor 28 is composed of a belt conveyor made by winding a thin and meshy endless belt 30 around belt driving cars 34 and 35 arranged outside the steam chest. The outward journey 30a of the belt conveyor is made to progress in the steam chest so as to bring the steam chest to an upper steam chest 26a and a lower steam chest 26b. A steam pipe 32 is arranged in the lower steam chest along the forward direction of the outward journey and steam supplied to the steam pipe is discharged in the lower steam chest. Partition plates 50 to partition the lower steam chest into a plurality of small steam chambers 52 in the back and forth of the forward direction of the outward journey are arranged in a condition of passing through the steam pipe. <P>COPYRIGHT: (C)2003,JPO |
