摘要 PURPOSE: Provided are noodles or dumpling skins using Molokhia as main ingredient and a manufacturing method thereof. Molokhia improves constipation, inhibits the absorption of cholesterol to prevent hypertension and atherosclerosis, and contains abundant calcium, dietary fiber, vitamin A1, B1, B2 and C, polyphenol and beta-carotene to inhibit activated oxygen. CONSTITUTION: A manufacturing method of noodles or dumpling skins is characterized by drying and powdering Molokhia; mixing the Molokhia powder with wheat flour and kneading the mixture thereof with adding gluten; and preparing dumpling skins or noodles using the dough.
