<P>PROBLEM TO BE SOLVED: To provide a method for producing a foamed composition whose foam stability, especially small specific gravity, can be maintained, even when mixed with an oil or fat or an oil or fat-containing raw such as chocolate, and to provide a method for producing a baked confectionery, such as cake or soft cookie, using the foamed composition. <P>SOLUTION: This method for producing the foamed composition is characterized by mixing albumen, an emulsifier, and a thickener and then foaming the mixture.
